I do a variation of this on a normal basis.... Usually I scarmble the egs though, add a bit of milk whilst cooking... and afterwards mix in the mayo to taste... old family recipe... mucho goodness.

I'm a big fan of cheese & egg bagels:D
Personally, I'd leave out the bacon just to make it a faster meal.
